That's Dr. Barrow to you. Stuart leads an ivory-tower existence in the nation's capital, working in a rather arcane and technical part of the bureaucratic edifice that is the public service. He used to be a junior scientist, and is now a trainee mandarin. He likes to cook: he suggests you try blending the following into a paste: a teaspoon of black salt (available from Indian grocers), half a teaspoon each of ground cumin and coriander, about two teaspoons each of lemon and lime juice, and a largish green chilli.
